I took a week off but now I’m back with a new recipe. You probably know this one with a different name or slightly different version. Here’s my version of a three cheese pasta bake with some veggies. Of course you can always use different veggies or pasta. Feel free to improvise.

This recipe is for when you’re feeling hungry and you want something quick and easy. It looks nothing special or difficult but it’s very delicious. And it’s doesn’t cost a lot.

The ingredients are for 2-3 portions. The cooking time is around 30 minutes.

All you need is:

  • 150-200g pasta
  • 1 can of chopped tomatoes (210g)
  • 1 courgette
  • 125g cherry tomatoes
  • 1 mozzarella ball (125g)
  • Cheddar cheese
  • Italian hard cheese (Parmesan)
  • 1 tbsp tomato paste
  • 2 garlic cloves
  • 1 cube/ sachet vegetable stock (11g)
  • 1 tbsp balsamic vinegar
  • 1 tsp dried basil
  • 1 tsp sugar
  • Salt and pepper
  • Olive oil

Start with preparing the veggies – finely cut the courgette into quarters, cut the tomatoes into halves and chop/grate/ the garlic.

You can also prepare the vegetable stock – add the basil, the vinegar, the tomato paste, 1 tsp sugar and 100ml boiled water and mix it well. This is for your sauce so set on side for later.

Heat up a large pan with some olive oil and put the courgette and the garlic with a pinch of salt to cook for 4-5 minutes or until they soften. Meanwhile you can put your pasta to boil in a large pot with some salt.

Once the courgette is beginning to soften, add the cherry tomatoes with the stock mix, the can of chopped tomatoes and a pinch of pepper. Mix well and cook for 5 minutes.

Meanwhile, grate the cheddar cheese and the Parmesan. Drain and tear the mozzarella into bite-sized pieces. After your pasta and the sauce are ready, mix them together and add half of it in a ovenproof dish. Sprinkle the cheddar. Then add the rest of the pasta and top with mozzarella and the Parmesan. Put it to bake in the oven at 240C for 10 minutes or until the cheese is melted. And you’re done.
